For those of you who need a nut-free and grain-free recipe, these chocolate chip cookies are for you!
Mmm. This recipe came from the Detoxinista. I really loved how soft these turned out. She was serious about how these cookies don't fall into shape though, so if you want pretty cookies, I'd shape them with a spoon.
Without further ado, here's the recipe!
Coconut Flour Chocolate Chip Cookies
makes 12 cookies
Adapted from this recipe
Ingredients:
1/3 cup coconut flour
1/4 cup coconut oil, melted
1/4 cup pure maple syrup
1 teaspoon vanilla extract
1/4 teaspoon salt
2 whole eggs
1/3 cup dark chocolate chips
Directions:
Preheat your oven to 350F and line a baking sheet with a silpat or parchment paper. In a medium bowl, whisk together the coconut flour, coconut oil, maple syrup, vanilla, salt and eggs until a uniform batter is created. The batter will start off a bit runny, but will thicken as the coconut flour starts to absorb the moisture. Add in the chocolate chips, and stir to distribute them evenly.
This recipe was super easy to make. At first the batter seemed really dry, but the cookies still came together. I could still shape some tiny cookies with my fingers. I may have made a little more than 12. I managed to squeeze19 out of my batter. (This may or may not be a result of being a little liberal with my Mexican Vanilla or chocolate chips.)
