It's impossible not to fall in love with these Champagne Cupcakes from 52 Kitchen Adventures. Forget the actual New Year - these guys stole the night. I am convinced they are perfect in every single way. Bake them for New Year, weddings or even birthdays. I can't think of a better addition to a celebration.
Instead of champagne, I substituted for sparkling peach and apple cider.
This recipe also gave me an excuse to pull out the new mixer. (Thanks, Santa!) Baking cupcakes is such a breeze now.
Be sure to fill up each cup a little over half-full. If you need a little extra help and can't eyeball it, try getting one of these ice cream scoops. It does the trick for me.
After 18-20 minutes of baking, these cupcakes look SO good! A beautiful golden pan of cupcakes greeted me when I came over to check on them.
Get that icing together, wait for the cupcakes to cool and slap it on. These are ready for New Year's Eve! Unfortunately, none of them made it to 2015. They were gone in an instant. Some golden memories must be left in 2014, and these cupcakes are one of them.
