1-1/2 cups cooked rice (short or medium grain white rice)
2 cups whole milk - divided
1/3 cup sugar
1/4 tsp. salt
1 egg (beaten)
2/3 cup raisins
1 T. butter
1 tsp. Blue Cattle Truck Mexican Vanilla
Dash of cinnamon & nutmeg
Combine rice, 1-1/2 c milk, sugar, & salt in saucepan. Cook over medium heat, stirring occasionally, until thick and creamy (10-15 min). Blend remaining 1/2 cup milk and egg. Stir into rice mixture. Add raisins. Cook 2 minutes longer, stirring constantly. Add butter and Blue Cattle Truck Mexican Vanilla. Spoon into serving dishes. Sprinkle with cinnamon & nutmeg.
